I have made many pizzas in my life. With various recipes. And in many variations. But, of all, the best pizza is this one. That's why I give you the recipe!
Delicious
and simple, able to satisfy young and old, who like their pizza to have a fluffy and crispy dough.
I also give
you the recipe for the delicious homemade pizza sauce that I make and the
adults like it the most.
If you are in a hurry and you want to finish faster or if your pizza will be eaten by children, then I have another secret for you: Do not make the effort to make the sauce! Instead, spread on the dough some ketchup and sprinkle it with a little oregano.
You will
greatly reduce the time you are in the kitchen and the children like it much
more!
Recipe
For the sauce
- 1 tbsp. olive oil
- 1 tbsp. chopped onion
- 2 small cloves of garlic
- 1 tbsp. tomato paste
- 150gr. chopped tomato
- 1/3 tsp. sugar
- 1/3 tsp. salt
- ½ tsp. dried oregano
- 1 bay leaf
- ½ tsp. dried basil
- ¼ tsp. grated pepper
- A few drops of lemon juice
For the dough
- 400gr. all-purpose flour
- 1 sachet of dry yeast
- 1 tsp. sugar
- 1 tsp. salt
- 250gr. lukewarm water
- 20gr. of olive oil
- Toppings according to your preference (bacon, pepperoni, mozzarella, tomato, pepper, onion, feta, olives, etc.)
For the sauce
- Put the olive oil, the onion, and the garlic cloves in a saucepan and fry them until the onion turns golden.
- Add the tomato paste, tomato, sugar, salt, oregano, bay leaf, basil, pepper, and lemon and cook the sauce in low heat, while stirring constantly for about 10 minutes until enough water is evaporated.
- When the sauce has cooled, remove the bay leaf and garlic and mash it in a blender.
- Keep it for later.
For the pizza
- Αdd the yeast, sugar, and lukewarm water in a bowl and mix.
- Place the flour and salt on the surface without mixing and wait for 5'-10' until the yeast foams and comes to the surface.
- Knead first with a fork and then with your hands until the dough is formed.
- Add the olive oil to the dough and knead until the oil is absorbed.
- Knead the dough on the counter for 5 minutes until it sticks slightly to the hands.
- Leave the dough in a bowl with a wet towel on top to rise for 30'-60' in a warm place.
- Pour a little more olive oil into a pan and spread the dough on top. Add the sauce and toppings of your choice and bake at 200°C for 20'-25'.
